Here's a GREAT way to spice up your chocolate chip cookies with RAWR!
You're gonna need the following:
280g of coconut sugar
250g of plain flour
225g of dark chocolate chips
225g of unsalted butter
30g of RAWR Fusion Cardamom
3g of baking soda
4g of salt
10ml of vanilla extract
and here's how you do:
Melt the butter in a saucepan over a medium-high heat. Gently swirl the pan until particles begin to turn golden brown and butter smells nutty (around five mins), then remove from heat
Pour the butter into a suitable mixing bowl and leave to cool down to room temperature
In a seperate bowl, whisk together the flour, baking soda, and salt to ensure there's an even distribution (no salt pockets) then add the coconut sugar, eggs, and vanilla extract. Whisk until the ingredients are only just combined (a bit of flour here and there is perfect)
When the butter mixture has cooled down, add it to the previous mixture and fold together using a spatula, until only just combined
Lastly, add the dark chocolate chips and the RAWR Fusion Cardamom and do a final fold until, you guessed it, only just combined. Cover the mix with a beeswax wrap (or clingwrap for you naughty plastic addicts) and refrigerate overnight (or at least two hours if you can't wait)
When you're ready to bake, preheat your oven to 160C
Using an ice-cream scoop or tablespoon, place six generously-spaced scoops of the dough (at least a ten centimetre gap) onto a lined baking tray and do not flatten them(!). Bake in the middle rack for around fifteen minutes/until the cookies are golden brown at the edges but still soft at the centre
Remove from oven and let the cookies cool for two minutes before transferring them to a wire rack to cool completely
Repeat the last two steps until there's no dough left, then put your paws up and enjoy!
